Assistant Professor at UC Davis Department of Food Science and Technology
Over the last decade I have been working with the application of environmentally friendly technologies in Food Science and Technology, particularly focused on extracting and fractionating major food components such as oil, protein, and carbohydrates. My multidisciplinary research experience (engineering, technology, and analytical) has focused on the development and application of bio-processing technologies such as enzyme-assisted aqueous extraction, supercritical and subcritical fluid extraction, enzymatic synthesis, fermentation, scaling-up extraction processes and downstream processes from laboratory scale to pilot plant, and on the application of membrane filtration to recover extracted components with improved functionalities.
