Bio

Mara is a Research Assistant from Germany she has a B.E. in Food Technology from Trier University Applied Sciences and a M.S. in Applied Biology and Food Science from Flensburg University of Applied Sciences. She joined the Barile Lab in May 2021 as a visiting scholar to carry out her master's thesis research with the title "Investigating the Composition and Abundance of Oligosaccharides in Processed Chardonnay Marc and Marc Enhanced Chocolate by Mass Spectrometry".

Her research in the Barile Lab focuses on uncovering the oligosaccharide profile of wine byproducts and their potential use as a source of antioxidants and prebiotics in food. She hopes that by expanding our understanding of waste streams and byproducts, we will be able to better utilize their attributes to improve health and sustainability.
