I joined the lab in Fall 2012, to acquire skills in mass spectrometry and do some work with milk peptides. Right now I am analyzing the peptide profile in bovine milk, as a result of the influence of native proteases (i. e. plasmin & cathepsins).

Over the last decade I have been working with the application of environmentally friendly technologies in Food Science and Technology, particularly focused on extracting and fractionating major food components such as oil, protein, and carbohydrates. My multidisciplinary research experience (engineering, technology, and analytical) has focused on the development and application of bio-processing technologies such as enzyme-assisted aqueous extraction, supercritical and subcritical fluid extraction, enzymatic synthesis, fermentation, scaling-up extraction processes and downstream processes from laboratory scale to pilot plant, and on the application of membrane filtration to recover extracted components with improved functionalities.

I am a Junior Specialist and also lab manager of the Lab. My research area is to purify and characterize milk oligosaccharides from different milk samples and difference sources by NanoChip-Q-TOF and quantify milk oligoshaccrides and monosaccharides using Dionex HPAE-PAD. Meanwhile I am doing method development to quantify trace and novel oligosaccharides using Dionex HPAEA-PAD. When I first join this lab in Spring 2013, I was working with visiting professor Paola Domizio to characterize and quantify mannoproteins released by non-Saccharomyces yeast. We also studied the effect of mannoproteins on wine quality.

The general aim of my research is to use new analytical tools and omics to improve human health and prevent disease. To accomplish this goal, I joined the Barile’s lab in UC Davis to work on milk glycoprotein and oligosaccharides which are bioactive components and play a key role in health and disease prevention. My research focused on the purification of this milk components and their characterization using mass spectrometry.
